Sabrina Medora, Host & Writer

Born in Canada and raised in India, America, and Singapore, Medora credits her love for food and adventurous palate to her upbringing. At Indiana University, Medora majored in Criminal Justice, Sociology, and English—all of which helped her to understand human psychology and its power through the written word. Medora went on to earn her Master’s of Arts in Humanities and Creative Writing at The University of Chicago. Medora is also a certified copy-editor (Centennial College) and digital marketing manager (New York University). 

After several years of working in advertising, Sabrina left corporate America to pursue her dream of being a food writer full time. In addition to national magazines like Bon Appetit and Plate Magazine, Sabrina’s work has been published in a large number of regional outlets like Eater, On Tap, Edible, and various Modern Luxury publications. 

In 2018, Medora launched Un-Plated, a national multimedia platform dedicated to celebrating the little-known stories and unsung heroes of the restaurant industry.  The rapidly-growing platform is fueled by Medora’s belief that too little is being done to share the real stories of what it’s like to work in the restaurant industry.  Un-Plated aims to build deeper connections between the people who work in restaurants and the people who covet the dining out experience.  In Medora’s own words, “It’s not about what’s on the plate, it’s about the people who got it there.”

In her spare time, Medora enjoys napping, practicing yoga, watching competitive cooking shows, and re-reading Harry Potter books. Medora lives in Virginia with her husband and their mischievous Goldendoodle, Albus.

 

Jacqui Spears, Executive Projects Assistant

Jacqui joins Un-Plated after several years in the food & beverage industry. Her most recent venture took her to the scrappy city of Detroit, where she helped open and manage a brewery. Jacqui developed an appreciation for food while working on a vegetable production farm in Northern Michigan, and is pursuing a masters degree to further explore how food can meet the table sustainably. With a strong understanding that the best way to show appreciation is through the breaking of bread, Jacqui can often be found around the dinner table with family and friends. When she’s not at Un-Plated, she enjoys traveling the world and sampling great food and wine along the way.

 

Samantha Crafton, Public Relations

After graduating from the University of Iowa with a B.A. in Communications Studies, Samantha went on to work for some of Chicago’s top agencies.  In 2012, she moved to Las Vegas to work with  some of The Strip’s most exciting nightclubs and restaurants like TAO Asian Bistro and TAO Beach at the Venetian Resort & Casino and Marquee Dayclub/Nightclub at The Cosmopolitan.  

Samantha subsequently returned to Chicago to launch Samantha Crafton Public Relations (SCPR,) an innovative, results-driven PR company.  With offices in Chicago and Washington DC, SCPR creates and executes customized campaigns for clients in the restaurant/bar, hospitality and luxury lifestyle industries.  SCPR’s practices are largely driven by Samantha’s belief in “wholistic PR” – an approach that incorporates all aspects of publicity, media relations and branding.   Over the years, Samantha has built and extensive network of national press contacts, influencers and industry connectors, all of which assist in increasing brand awareness for SCPR’s clients and partners. 

In her spare time Samantha enjoys traveling, drinking champagne and pushing herself to limit with an OrangeTheory workout class.
